For jousting you're going to need a Draft breed
The two most popular I've seen are the Gypsy Drum
I believe the bc on it is Am/Extra/Eg/Eg
The other I've seen is the Grade Draft AAA's
And according to the wiki site their bc is Am/Am/Extra/Extra

Draft breeds get the big bonus.

Stats that are important (therefore ideally need to be higher) is Strength and Speed.

For this reason Drums and Grade AAA Drafts tend to be more popular at this point :3

When you're starting out in a new discipline something that might help is to look at the horses that're already eventing to get an idea of what your own horse needs to look like to win

As Jelly said, strength and speed are the most important, to get some ideas on what the stats need to be at go check out those Jousting ponehs

Goodluck :D
